Australian Herb Damper for Lammas

Herb Damper for Lammas In Australia

This damper recipe is perfect for your Australian Lammas celebrations. This recipe can be made with herbs such as parsley, chives, mint, dill, basil and oregano. You should have a combination of three different herbs and remember to choose them based on what else you are serving.

Cooking time: 35-45 minutes
Serves: 8 People

Ingredients

4 cups of self raising flour
1tsp baking powder
1tsp salt
1tbs caster sugar
3/4 cup milk
1/2 – 3/4 cup water
30g butter melted
extra milk and flour

  1. Preheat your oven to 210°C (190°C if using gas). Prepare your oven tray by brushing with melted butter or oil. Set aside. In a bowl sift flour, baking powder and salt, stir in sugar and your chosen herbs then make a well in the center. In a separate bowl combine the milk and 1/2 a cup of the water and the butter, then add to the flour mixture all at once.
  2. With a flat bladed knife, mix lightly to a soft dough. If needed add some of the remaining water. Knead your dough briefly on a lightly floured surface (remember not to overwork your dough) Once kneaded form your dough into a rough ball.
  3. Place the dough onto your prepared tray, flatten slightly brush with a little milk (this will make the bread turn golden brown). With a knife cut slashes 1cm deep into the top and then sprinkle with a little cheddar cheese. Bake in the oven for 15minutes and then reduce the heat to 180°C and bake for a further 25-30minutes or until golden brown.
